They are universally loved by all and can be as sweet or refreshing as you like! Here are some of my favourite hacks when it comes to ice cream cakes.
First up is my Easter hack, as seen on the Binny blog in 2021!
This little idea is a regular of mine for kids’ Easter dessert – like they really need any! But I’ll have a classic ice cream cake from the supermarket on hand (I actually love making ice cream cakes, but usually, there is no room in the freezer at Easter!). Then I’ll pinch some of the kid’s chocolate eggs while they’re not looking and decorate the top with chocolate and berries.
I’ll then try and find some sort of amazing decorated egg for the top. This year I found this fab, retro-style decorated sugar egg at Drakes Supermarket (!) that I basically want to keep on the mantle forever. Look, it’s a bit too big for the cake, but the kids will go bananas when they see it, and I just love the kid’s joy during the holidays. So we’ll go big!

Kids’ Birthday Ice Cream Cake Hack
So this one featured at Teddy’s 3rd ‘Blue-thday’ when he was obsessed with all things blue.
He really wanted an ice cream cake – no probs – BUT kids get very impatient when it comes to cake time at parties, so I needed a good strategy.
I started the usual way, but making a few different layers of ice cream in cake tins. I layer cling wrap in the bottom, so it’s easy to pull out later. Then when they were all set, I combined them so the ‘foundation’ of the cake was made and ready before the party but still fit in the fridge.
Now, this is where the clever bit comes in. Then I scooped lots of balls of ice cream ahead of time and froze them, so when it was time to assemble the cake at the party (plinking the balls on top of the main part of the ice cream cake), it was easy-as. After we sang Happy Birthday, all I had to do was quickly scoop a ball of ice cream into a kid’s cone and pass it on. No waiting and crazy melting issues.
It worked a treat!

ANOTHER TIP!
Here’s another fun tip for you – you can ‘ice’ your icecream cake with whipped cream! Simply spray onto the sides and smooth it all over then pop back into the freezer for it to set. It looks awesome and tastes delish!
